Colorful Veggie Lettuce Wraps

Ingredients

The wraps

  • 2 heads butter lettuce
  • 1 ½ cups edamame hummus
  • 3 cups thinly sliced crisp vegetables
  • ¼ cup rice vinegar
  • ¼ teaspoon salt

The filling

  • 4 ½ ounces soba noodles
  • ¾ cup thinly sliced green onions
  • 2 tablespoons sesame seeds
  • 2 tablespoons reduced-sodium tamari or soy sauce
  • 2 teaspoons toasted sesame oil

Instructions

  1. Boil salted water for the soba noodles and set aside 12 intact lettuce leaves.
  2. In a bowl, mix sliced vegetables with vinegar and salt, and let marinate for at least 10 minutes.
  3. Cook soba noodles until al dente, then mix with green onions, sesame seeds, tamari, and sesame oil.
  4. Assemble the wraps by spreading hummus on a lettuce leaf, adding soba noodles and pickled veggies, and sprinkling with sesame seeds.
