Colorful Veggie Lettuce Wraps

Instructions
- Boil salted water for the soba noodles and set aside 12 intact lettuce leaves.
- In a bowl, mix sliced vegetables with vinegar and salt, and let marinate for at least 10 minutes.
- Cook soba noodles until al dente, then mix with green onions, sesame seeds, tamari, and sesame oil.
- Assemble the wraps by spreading hummus on a lettuce leaf, adding soba noodles and pickled veggies, and sprinkling with sesame seeds.
