Ingredients

The base

  • 8 cups apples (mix of green and red; about 3 ½ pounds)
  • 1 large orange (12 ounces)
  • 4 sticks cinnamon
  • 1 whole nutmeg
  • 1 teaspoon whole cloves
  • 10 cups water

The sweetener

  • cup maple syrup

Instructions

  1. Slice the apples and oranges into quarters and add them to a large stockpot.
  2. Add the cinnamon, nutmeg, cloves, and water to the pot.
  3. Bring the mixture to a boil, then lower the heat and cover, simmering for about 1 hour.
  4. Mash the cooked fruit with a potato masher and simmer for another hour.
  5. Strain the mixture to remove the pulp, preferably double-straining for smoothness.
  6. Return the strained cider to the pot and add maple syrup, adjusting sweetness to taste.
  7. Serve warm, optionally with extra sliced fruit.
