Rhubarb Strawberry Margaritas

Ingredients

Strawberry Rhubarb Syrup

  • cups chopped rhubarb
  • cups hulled, sliced strawberries
  • 3 Tbsp organic cane sugar
  • ¾ cup water
  • 1 Tbsp orange juice (optional)

Margarita

  • cup strawberry rhubarb syrup
  • 1 Tbsp lime juice
  • 1 ounce silver tequila
  • 1-2 tsp agave nectar

Instructions

  1. Combine rhubarb, strawberries, organic cane sugar, water, and optional orange juice in a medium saucepan and bring to a simmer.
  2. Reduce heat and cook until softened, stirring and mashing the fruit for about 5 minutes.
  3. Remove from heat and let cool slightly, then strain the mixture through a fine mesh strainer to extract syrup.
  4. Refrigerate the syrup for at least a few hours or place in the freezer to cool faster.
  5. Prepare serving glasses by running a lime wedge around the rim and dipping in salt or sugar.
  6. To make one margarita, add strawberry rhubarb syrup, lime juice, tequila, agave nectar, and ice to a cocktail shaker.
  7. Shake vigorously, taste, and adjust flavors if necessary.
  8. Pour into prepared glasses and enjoy.
