Rhubarb Strawberry Margaritas

strawberry rhubarb syrup

silver tequila

Instructions
- Combine rhubarb, strawberries, organic cane sugar, water, and optional orange juice in a medium saucepan and bring to a simmer.
- Reduce heat and cook until softened, stirring and mashing the fruit for about 5 minutes.
- Remove from heat and let cool slightly, then strain the mixture through a fine mesh strainer to extract syrup.
- Refrigerate the syrup for at least a few hours or place in the freezer to cool faster.
- Prepare serving glasses by running a lime wedge around the rim and dipping in salt or sugar.
- To make one margarita, add strawberry rhubarb syrup, lime juice, tequila, agave nectar, and ice to a cocktail shaker.
- Shake vigorously, taste, and adjust flavors if necessary.
- Pour into prepared glasses and enjoy.
