Instructions

  1. Pop the popcorn kernels using a method of your choice, ensuring to use minimal oil and high heat.
  2. Toast the macadamia nuts until golden, being careful not to burn them.
  3. In a saucepan, combine sugar and a little water to create the caramel mixture, heating until it melts and turns golden.
  4. Add the spices (cinnamon, nutmeg, cloves, cardamom) to the caramel and stir well.
  5. Pour the caramel over the popped popcorn and mix until evenly coated.
  6. Spread the coated popcorn on a baking sheet to cool and firm up.
