Instructions
- Preheat the oven to 250°F and coat two sheet pans with cooking spray.
- Place the popcorn in a large bowl.
- Melt the butter in a saucepan over medium heat, then add brown sugar, corn syrup, and salt.
- Increase the heat to medium-high and bring the mixture to a boil while stirring continuously.
- Once boiling, stop stirring and let it cook undisturbed for 4 minutes.
- Remove the caramel from heat, add baking soda and vanilla extract, and stir.
- Pour the caramel over the popcorn and quickly toss to coat.
- Divide the caramel corn between the two sheet pans and place them in the oven.
- Bake for 1 hour, stirring every 15 minutes and rotating the pans.
- Remove from the oven, cool, break into pieces, and serve.
