Salted Caramel Popcorn
Ingredients

The caramel coating

packed light brown sugar

unsalted butter

light corn syrup

fine sea salt

sweetened condensed milk

vanilla extract
Instructions
- Pour the popped popcorn into two large mixing bowls or one giant mixing bowl.
- In a medium saucepan, combine brown sugar, butter, corn syrup, and 1/2 tsp of the sea salt.
- Bring the mixture to a boil over medium-high heat while stirring constantly.
- Once boiling, add the sweetened condensed milk and return to a boil, cooking until it reaches 236 - 238 degrees on a candy thermometer.
- Remove from heat, stir in vanilla and the remaining 1 1/2 tsp of fine sea salt.
- Drizzle half of the caramel over the popcorn and toss several times, then drizzle in the remaining caramel and toss until evenly coated.
- Allow to cool and store in airtight containers.
