Salted Caramel Popcorn

Ingredients

The popcorn

  • 1 - 1 1/4 cups popcorn kernels, popped

The caramel coating

  • 2 1/4 cups packed light brown sugar
  • 1 cup unsalted butter
  • 1 cup light corn syrup
  • 2 tsp fine sea salt
  • 1 14 oz can sweetened condensed milk
  • 1 1/2 tsp vanilla extract

Instructions

  1. Pour the popped popcorn into two large mixing bowls or one giant mixing bowl.
  2. In a medium saucepan, combine brown sugar, butter, corn syrup, and 1/2 tsp of the sea salt.
  3. Bring the mixture to a boil over medium-high heat while stirring constantly.
  4. Once boiling, add the sweetened condensed milk and return to a boil, cooking until it reaches 236 - 238 degrees on a candy thermometer.
  5. Remove from heat, stir in vanilla and the remaining 1 1/2 tsp of fine sea salt.
  6. Drizzle half of the caramel over the popcorn and toss several times, then drizzle in the remaining caramel and toss until evenly coated.
  7. Allow to cool and store in airtight containers.
