Instructions
- Place the popcorn in a large bowl.
- In a medium saucepan, combine brown sugar, butter, corn syrup, and salt, heating over medium-low until melted.
- Increase the heat to medium and bring the mixture to a simmer, stirring often for 3-4 minutes.
- Off the heat, whisk in baking soda and vanilla quickly, as the mixture will foam.
- Pour the caramel over the popcorn in a steady drizzle, tossing to coat evenly.
- Serve immediately or within a couple of hours.
