Ingredients

The popcorn

  • 10-12 cups plain popcorn
  • cup kernels

The caramel

  • 1 cup packed light or dark brown sugar
  • ½ cup salted butter
  • ¼ cup corn syrup
  • a pinch coarse kosher salt
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Place the popcorn in a large bowl.
  2. In a medium saucepan, combine brown sugar, butter, corn syrup, and salt, heating over medium-low until melted.
  3. Increase the heat to medium and bring the mixture to a simmer, stirring often for 3-4 minutes.
  4. Off the heat, whisk in baking soda and vanilla quickly, as the mixture will foam.
  5. Pour the caramel over the popcorn in a steady drizzle, tossing to coat evenly.
  6. Serve immediately or within a couple of hours.
