Ingredients

The popcorn

  • 2 bags microwave popcorn
  • 8 cups popped popcorn
  • 1 cup honey roasted peanuts (optional)

The caramel

  • ¼ cup butter
  • ½ cup dark brown sugar
  • ½ cup dark Karo syrup
  • 1 teaspoon vanilla
  • ¼ teaspoon baking soda
  • ½ teaspoon kosher salt, divided

Instructions

  1. Place the popped popcorn in a large bowl and set aside. If desired, add peanuts to the popcorn.
  2. Preheat the oven to 300°F. Line a baking sheet with aluminum foil and spray with non-stick cooking spray.
  3. In a saucepan, combine butter, dark brown sugar, and dark Karo syrup. Bring to a boil over medium heat, stirring constantly for 2 minutes.
  4. Remove from heat and stir in vanilla, baking soda, and ¼ teaspoon kosher salt.
  5. Pour the hot caramel over the popcorn and stir quickly to coat evenly.
  6. Spread the popcorn on the baking sheet and sprinkle with the remaining ¼ teaspoon salt.
  7. Bake in the oven for 10-15 minutes, then allow to cool completely before breaking apart and serving.
