The caramel

Instructions
- Place the popped popcorn in a large bowl and set aside. If desired, add peanuts to the popcorn.
- Preheat the oven to 300°F. Line a baking sheet with aluminum foil and spray with non-stick cooking spray.
- In a saucepan, combine butter, dark brown sugar, and dark Karo syrup. Bring to a boil over medium heat, stirring constantly for 2 minutes.
- Remove from heat and stir in vanilla, baking soda, and ¼ teaspoon kosher salt.
- Pour the hot caramel over the popcorn and stir quickly to coat evenly.
- Spread the popcorn on the baking sheet and sprinkle with the remaining ¼ teaspoon salt.
- Bake in the oven for 10-15 minutes, then allow to cool completely before breaking apart and serving.
