Ingredients

The caramel

  • ½ cup salted butter
  • 1 cup light brown sugar (packed)
  • ¼ cup light or dark corn syrup
  • tsp salt
  • ¼ tsp baking soda
  • ½ tsp vanilla extract

The popcorn

  • 12 cups popped popcorn

Instructions

  1. 1. Preheat the oven to 300°F and prepare a baking sheet with aluminum foil and cooking spray.
  2. 2. Melt the butter in a large stockpot over medium-high heat, then add brown sugar and corn syrup, stirring to combine.
  3. 3. Bring the mixture to a rolling boil, reduce heat, and let it simmer undisturbed for 5 minutes.
  4. 4. Stir the mixture and continue to cook for an additional 4 to 6 minutes until it reaches a deep golden color.
  5. 5. Turn off the heat and whisk in salt, baking soda, and vanilla carefully as the mixture will bubble.
  6. 6. Add the popcorn to the caramel and toss until evenly coated.
  7. 7. Spread the mixture onto the prepared baking sheet in an even layer and bake for 15 to 20 minutes, stirring every 5 minutes.
  8. 8. Remove from the oven and cool on parchment or wax paper, then break into pieces and store in an airtight container.
