Homemade Caramel Corn

Instructions
- 1. Preheat the oven to 300°F and prepare a baking sheet with aluminum foil and cooking spray.
- 2. Melt the butter in a large stockpot over medium-high heat, then add brown sugar and corn syrup, stirring to combine.
- 3. Bring the mixture to a rolling boil, reduce heat, and let it simmer undisturbed for 5 minutes.
- 4. Stir the mixture and continue to cook for an additional 4 to 6 minutes until it reaches a deep golden color.
- 5. Turn off the heat and whisk in salt, baking soda, and vanilla carefully as the mixture will bubble.
- 6. Add the popcorn to the caramel and toss until evenly coated.
- 7. Spread the mixture onto the prepared baking sheet in an even layer and bake for 15 to 20 minutes, stirring every 5 minutes.
- 8. Remove from the oven and cool on parchment or wax paper, then break into pieces and store in an airtight container.
