Instructions
- Preheat the oven to 250°F.
- Pop the popcorn using an air popper and spread it evenly on two large baking sheets.
- Melt the butter in a saucepan over medium heat and add the brown sugar, corn syrup, and salt, stirring until well combined.
- Bring the mixture to a boil, stirring constantly, then let it boil for 5 minutes without stirring.
- Stir in the vanilla and gradually pour the caramel mixture over the popcorn, mixing well.
- Sprinkle the popcorn with the cinnamon and sugar mixture.
- Bake in the preheated oven for about 30 minutes, stirring every 10 minutes.
- Remove from the oven and sprinkle with more cinnamon and sugar, and drizzle with white chocolate if desired.
