Walnut Meatballs with Tzatziki Sauce

The tzatziki sauce
Instructions
- Prepare the tzatziki sauce and refrigerate for at least 1 hour.
- In a pot, heat 1 tbsp olive oil and sauté onions and garlic for 5 minutes.
- Add seasonings and stir for 2 minutes, then add capers and feta, cooking for another 3 minutes.
- Incorporate chickpeas, rice, or lentils and heat for 5 minutes.
- Transfer mixture to a bowl and add panko and dill.
- In the same pot, heat another tbsp of olive oil and cook ground walnuts for 5 minutes, deglazing with lemon juice.
- Combine walnuts with the mixture in the bowl and let sit for 30 minutes.
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Form meatballs and place them on the baking sheet, cooking for 35-40 minutes, flipping occasionally.
- Serve with salad, grains, tzatziki, or as part of a platter.
