Falafel Meatballs with Easy Tzatziki Sauce

Ingredients

Meatballs

  • 1 can (15-ounce) chickpeas, rinsed and drained
  • ¼ cup chopped fresh parsley
  • 1 large egg
  • 1 tablespoon dried oregano
  • 3 cloves fresh garlic, finely minced
  • 1 teaspoon coarse kosher salt
  • ¼ teaspoon black pepper
  • 1 ½ pounds lean ground beef or ground turkey
  • ¼ cup minced onion
  • ¼ cup milk
  • ¼ cup panko or regular bread crumbs
  • 1 squeeze fresh lemon juice

Tzatziki Sauce

  • 1 cup plain yogurt
  • ½ cup grated cucumber, seedless variety
  • ½ cup crumbled feta cheese
  • 1 clove garlic, finely minced
  • 2 teaspoons fresh lemon juice
  • ¼ teaspoon coarse kosher salt
  • pinch black pepper
  • drizzle of olive oil

Wraps

  • as needed Boston or Bibb lettuce leaves
  • as needed diced tomatoes
  • as needed naan or flatbread, optional

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet.
  2. In a blender, combine chickpeas, parsley, egg, oregano, garlic, salt, and pepper, and puree.
  3. Transfer the mixture to a bowl, add ground meat, onion, milk, bread crumbs, and lemon juice, and mix well.
  4. Shape the mixture into 16-18 meatballs and place them on the baking sheet.
  5. Bake for 15-20 minutes until cooked through.
  6. For the tzatziki, mix yogurt, cucumber, feta, garlic, lemon juice, salt, and pepper in a bowl, then drizzle with olive oil and refrigerate.
  7. To serve, place meatballs in lettuce leaves, top with tzatziki and tomatoes, and optionally wrap in naan.
