Ingredients

The cake

  • 1 ½ cups whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • pinch salt
  • ¼ cup sugar
  • ½ cup maple syrup
  • ½ cup banana puree
  • ½ cup oil
  • ¼ cup water
  • 1 beaten egg (or 4 teaspoons flax for vegan)

The frosting

  • ¼ cup natural peanut butter
  • ¼ cup water
  • 2 tablespoons sugar

Instructions

  1. Preheat the oven to 350 degrees.
  2. Sift together the flour, baking powder, baking soda, salt, and flax (if using) in a large bowl.
  3. In a separate bowl, mix together the sugar, maple syrup, banana puree, oil, water, and egg.
  4. Combine the wet ingredients with the dry ingredients and pour into a greased 9×9 baking dish.
  5. Bake for 20-24 minutes or until a knife inserted comes out mostly clean.
  6. For the frosting, whisk together the peanut butter, sugar, and water until smooth and fluffy.
  7. Adjust the consistency with more peanut butter or water as needed, frost the cooled cake, and serve immediately.
