Ingredients

The base

  • 1 cup cooked brown rice, farro, or quinoa

The toppings

  • 2 units eggs, soft-boiled, poached, or fried
  • 1 unit avocado, sliced
  • 1 unit lemon, juiced
  • 2 tablespoons everything bagel spice
  • 1 cup arugula or micro greens
  • to taste units flaky sea salt
  • to taste units extra virgin olive oil
  • to taste units fresh chopped chives, basil, or dill

Instructions

  1. Spread the yogurt between 2 bowls.
  2. Top with brown rice, eggs, and avocado.
  3. Drizzle with lemon juice.
  4. Sprinkle with everything spice.
