diced pickle (or 1-2 tablespoons capers)

vegan mayo (or regular mayo)

Instructions
- Drain and chop the hearts of palm.
- Combine the hearts of palm with the remaining ingredients in a bowl and mix well.
- Season with salt and pepper to taste.
- Serve the salad on toasted bread, topped with avocado and microgreens, or use it in wraps.
