Ingredients

The salad

  • 1 can hearts of palm, drained and chopped (about 1 ½ cups) or jackfruit
  • ¼ cup red onion, finely diced (or green onion)
  • cup celery, finely chopped (or fennel bulb)
  • ¼ cup diced pickle (or 1-2 tablespoons capers)
  • ¼–½ cup chopped fresh herbs (parsley, dill, cilantro or a combo)
  • 1–2 teaspoons whole grain mustard
  • ¼ cup vegan mayo (or regular mayo)
  • to taste salt and pepper
  • pinch sugar (optional)
  • to taste optional additions (dulse flakes, lemon zest, chili flakes)

To serve

  • as needed toasted whole grain bread
  • as needed avocado
  • as needed microgreens

Instructions

  1. Drain and chop the hearts of palm.
  2. Combine the hearts of palm with the remaining ingredients in a bowl and mix well.
  3. Season with salt and pepper to taste.
  4. Serve the salad on toasted bread, topped with avocado and microgreens, or use it in wraps.
