Ingredients

The salad

  • 2 cans (5 oz) tuna in water
  • ½ cup diced seeded tomatoes
  • ½ cup diced yellow bell pepper
  • cup chopped red onion
  • ¼ cup chopped fresh parsley
  • 1 medium avocado
  • 2-3 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • to taste salt
  • to taste black pepper

For serving

  • as needed whole wheat sandwich thins, pita pockets, whole grain bread, or romaine lettuce leaves

Instructions

  1. Combine drained tuna, diced tomatoes, bell pepper, onion, parsley, avocado, olive oil, and lemon juice in a medium mixing bowl.
  2. Season with salt and pepper to taste and toss the mixture gently.
  3. Serve in sandwich thins, pita pockets, on toasted bread, or as lettuce wraps.
