Avocado Tuna Salad

Ingredients

  • 3-6 oz cans wild-caught albacore tuna, drained
  • 1 large avocado, diced
  • 2-3 tbsp spicy brown mustard
  • splash lemon juice or red wine vinegar
  • ½ medium apple, finely chopped
  • ½ small red onion, finely diced
  • 2 stalks celery, finely chopped
  • 1 medium carrot, finely chopped
  • ½ medium cucumber, de-seeded and chopped
  • 1 cup baby spinach, chopped
  • salt, pepper, and garlic powder to taste

Instructions

  1. Combine drained tuna, diced avocado, spicy brown mustard, and lemon juice in a bowl and mash together.
  2. Add the remaining ingredients and mix well to combine.
  3. Season with salt and pepper to taste.
  4. Serve over spinach, in romaine leaves, or on whole-grain bread.
