Cornmeal Whole Wheat Pancakes

Ingredients

Dry Ingredients

  • 1 cup whole wheat flour
  • ½ cup yellow cornmeal
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • teaspoon salt

Wet Ingredients

  • 2 large eggs
  • ¼ cup nonfat plain Greek yogurt
  • ¼ cup honey
  • ¾ cup unsweetened almond milk
  • 2 tablespoons coconut oil, melted

Instructions

  1. Whisk together all wet ingredients in a medium bowl, excluding the coconut oil.
  2. In a large bowl, whisk all dry ingredients together.
  3. Combine wet ingredients with dry ingredients and mix until smooth.
  4. Add melted coconut oil to the batter and mix again.
  5. Heat a frying pan over medium heat and spray with cooking spray.
  6. Scoop ⅓ cup of batter onto the pan and cook for 2-3 minutes on each side.
