Ingredients

The vegetables

  • 4 pieces parsnips, peeled and roughly sliced
  • 4 pieces yukon gold potatoes, peeled and roughly chopped

The mixture

  • ½ cup 2% milk
  • 1 tablespoon unsalted butter
  • 1 clove garlic, grated
  • ¼ cup fresh chives, sliced
  • to taste salt

Instructions

  1. Add parsnips, potatoes, and enough water to a large pot to cover the vegetables.
  2. Bring the water to a boil, then reduce to a simmer and cook until the vegetables are tender, about 8-10 minutes.
  3. Drain the water from the pot.
  4. Transfer the vegetables to a food processor or blender, and add milk, butter, grated garlic, and salt.
  5. Blend until smooth, then stir in the chives and serve.
