Easy Broccoli and Cheese Casserole

Instructions
- Cook the orzo according to package directions and reserve ¼ cup of the cooking water.
- While the orzo cooks, steam the broccoli and prepare the cheese sauce.
- Combine the steamed broccoli with the cooked orzo and mix in olive oil and any optional spices or protein.
- Preheat the oven to 350°F and grease a casserole dish.
- In a saucepan, melt butter or oil and whisk in flour and garlic powder, cooking until slightly browned.
- Gradually whisk in the non-dairy milk and vegetable broth until smooth and bring to a soft boil.
- Stir in the nutritional yeast or cheese and paprika, then combine the cheese sauce with the broccoli and orzo mixture.
- Spread the mixture in the casserole dish and top with additional cheese if desired.
- Bake for 25-30 minutes until bubbly and cheese is melted.
