Easy Broccoli and Cheese Casserole

Ingredients

Casserole Base

  • 3 – 3 ½ cups cooked gluten free orzo pasta
  • 2 Tablespoons olive oil
  • 14 – 16 ounces broccoli florets

Cheese Sauce

  • 3 Tablespoons butter or olive oil
  • 3 Tablespoons gluten free all-purpose flour
  • 1 teaspoon garlic powder
  • 1 cup non dairy milk
  • cup vegetable broth
  • ¼ cup nutritional yeast or shredded cheese
  • ½ teaspoon paprika
  • to taste Kosher salt
  • to taste pepper

Optional Mix-ins

  • 2 Tablespoons preferred salsa or spicy sauce
  • 1 cup cooked chicken or rinsed chickpeas

Instructions

  1. Cook the orzo according to package directions and reserve ¼ cup of the cooking water.
  2. While the orzo cooks, steam the broccoli and prepare the cheese sauce.
  3. Combine the steamed broccoli with the cooked orzo and mix in olive oil and any optional spices or protein.
  4. Preheat the oven to 350°F and grease a casserole dish.
  5. In a saucepan, melt butter or oil and whisk in flour and garlic powder, cooking until slightly browned.
  6. Gradually whisk in the non-dairy milk and vegetable broth until smooth and bring to a soft boil.
  7. Stir in the nutritional yeast or cheese and paprika, then combine the cheese sauce with the broccoli and orzo mixture.
  8. Spread the mixture in the casserole dish and top with additional cheese if desired.
  9. Bake for 25-30 minutes until bubbly and cheese is melted.
