Ingredients

Roasted Beets

  • 2 large beets
  • 2 tablespoons olive oil
  • a pinch of sea salt

Beet Green Pesto

  • 1 bunch beet greens
  • 3 cloves garlic
  • ½ cup chopped raw walnuts
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground pepper
  • ¼ cup olive oil

Pizza Assembly

  • 1 pound pizza dough
  • ¾ cup crumbled goat cheese
  • ½ cup chopped raw walnuts
  • ½ cup mixed spring greens

Instructions

  1. Preheat the oven to 425°F.
  2. Toss the sliced beets with olive oil and a pinch of salt, then bake until fork tender for 10-12 minutes.
  3. Prepare the pesto by blending beet greens, garlic, walnuts, salt, and pepper in a food processor, then drizzle in olive oil until smooth.
  4. Roll out the pizza dough into a 12-14 inch circle and spread the pesto over the crust.
  5. Top with roasted beets and goat cheese, then bake until the crust is golden and the cheese is melted, about 8-10 minutes.
  6. Sprinkle with walnuts and bake for an additional 2 minutes.
  7. Serve with mixed spring greens and a drizzle of olive oil.
