Instructions
- Preheat the oven to 425°F.
- Toss the sliced beets with olive oil and a pinch of salt, then bake until fork tender for 10-12 minutes.
- Prepare the pesto by blending beet greens, garlic, walnuts, salt, and pepper in a food processor, then drizzle in olive oil until smooth.
- Roll out the pizza dough into a 12-14 inch circle and spread the pesto over the crust.
- Top with roasted beets and goat cheese, then bake until the crust is golden and the cheese is melted, about 8-10 minutes.
- Sprinkle with walnuts and bake for an additional 2 minutes.
- Serve with mixed spring greens and a drizzle of olive oil.
