Ingredients

The beets

  • 1 pound beets

The dressing

  • 1–2 tablespoons olive oil
  • 2 teaspoons balsamic vinegar
  • to taste none sea salt

The topping

  • 1 batch Pesto

Instructions

  1. Preheat the oven to 350°F.
  2. Clean the beets and wrap them in foil, then place them on a pan.
  3. Bake the beets for 60-75 minutes until a knife can easily pierce the center.
  4. Once cooled, peel off the skins and slice the beets into ¼ inch slices.
  5. Brush the slices with olive oil, balsamic vinegar, and sprinkle with sea salt.
  6. Preheat the grill to high heat.
  7. Grill the beet slices for about 5 minutes on each side or until desired doneness.
  8. Serve drizzled with pesto and season with salt and pepper to taste.
