Instructions
- Preheat the oven to 350°F.
- Clean the beets and wrap them in foil, then place them on a pan.
- Bake the beets for 60-75 minutes until a knife can easily pierce the center.
- Once cooled, peel off the skins and slice the beets into ¼ inch slices.
- Brush the slices with olive oil, balsamic vinegar, and sprinkle with sea salt.
- Preheat the grill to high heat.
- Grill the beet slices for about 5 minutes on each side or until desired doneness.
- Serve drizzled with pesto and season with salt and pepper to taste.
