Ingredients

The beets

  • 6-7 medium beets

Seasoning

  • to taste Kosher salt
  • to taste Freshly ground pepper
  • liberal splash Balsamic vinegar
  • generous glug Extra virgin olive oil

Instructions

  1. Preheat the oven to 400°F.
  2. Wash and trim the beets, leaving about ½-inch of the stems and trimming the roots to about 2 inches.
  3. Place the beets in a single layer in a baking dish and add an inch of water.
  4. Cover the dish with aluminum foil and bake for about an hour, or until easily pierced with a knife.
  5. Cool the beets, then slice off the tops and peel the skins.
  6. Chop the beets into bite-size pieces and season with salt, pepper, and balsamic vinegar.
  7. Marinate the beets for at least 30 minutes, stirring occasionally, before adding olive oil.
