Instructions
- Preheat the oven to 400°F.
- Wash and trim the beets, leaving about ½-inch of the stems and trimming the roots to about 2 inches.
- Place the beets in a single layer in a baking dish and add an inch of water.
- Cover the dish with aluminum foil and bake for about an hour, or until easily pierced with a knife.
- Cool the beets, then slice off the tops and peel the skins.
- Chop the beets into bite-size pieces and season with salt, pepper, and balsamic vinegar.
- Marinate the beets for at least 30 minutes, stirring occasionally, before adding olive oil.
