Sheet Pan Salmon Stir Fry

Ingredients

Veggies

  • 4 cups chopped broccoli
  • 1 medium yellow bell pepper, chopped
  • 1 medium red bell pepper, chopped
  • 2 large carrots, cut into match sticks
  • ½ large yellow onion, chopped
  • 2 tablespoons olive oil
  • 2 teaspoons everything bagel seasoning

Sauce

  • ¼ cup soy sauce or tamari
  • 3 tablespoons maple syrup
  • 1 tablespoon minced garlic
  • 2 teaspoons fresh grated ginger
  • 1 teaspoon sriracha (optional)
  • 2 teaspoons cornstarch (optional thickener)

Salmon

  • 12 oz. salmon (2 6-oz. filets)
  • to taste pepper

Instructions

  1. Preheat the oven to 375ºF.
  2. Place chopped veggies on a baking sheet, drizzle with olive oil, and toss.
  3. Sprinkle with everything bagel seasoning and toss again.
  4. Roast veggies for 20-25 minutes until desired doneness.
  5. Transfer roasted veggies to a bowl.
  6. Whisk together sauce ingredients, excluding cornstarch.
  7. Dissolve cornstarch in warm water and add to the sauce, whisking to combine.
  8. Heat the sauce in the microwave for 90 seconds to 2 minutes before serving.
  9. Preheat the oven to high broil.
  10. Prepare a baking sheet with foil and spray with nonstick cooking spray.
  11. Pat salmon dry, place on foil, spray tops, and season with pepper.
  12. Broil salmon for 8 minutes until fully cooked.
  13. Let salmon sit, then shred and add to the veggie bowl.
  14. Pour heated sauce over the mixture and toss to combine.
  15. Serve stir fry with your choice of grain.
