Sheet Pan Salmon Stir Fry

Instructions
- Preheat the oven to 375ºF.
- Place chopped veggies on a baking sheet, drizzle with olive oil, and toss.
- Sprinkle with everything bagel seasoning and toss again.
- Roast veggies for 20-25 minutes until desired doneness.
- Transfer roasted veggies to a bowl.
- Whisk together sauce ingredients, excluding cornstarch.
- Dissolve cornstarch in warm water and add to the sauce, whisking to combine.
- Heat the sauce in the microwave for 90 seconds to 2 minutes before serving.
- Preheat the oven to high broil.
- Prepare a baking sheet with foil and spray with nonstick cooking spray.
- Pat salmon dry, place on foil, spray tops, and season with pepper.
- Broil salmon for 8 minutes until fully cooked.
- Let salmon sit, then shred and add to the veggie bowl.
- Pour heated sauce over the mixture and toss to combine.
- Serve stir fry with your choice of grain.
