Ingredients

  • 16 ounces uncooked skinless salmon fillets, cut into 1-inch cubes
  • ½ cup gluten-free stir fry sauce, divided
  • 1 tablespoon neutral-flavored cooking oil (e.g., avocado oil)
  • 2 cloves garlic, minced
  • 1 medium onion, peeled and sliced into thin rounds
  • 1 medium red or yellow bell pepper, cored and sliced into thin strips
  • 1 cup fresh green beans or broccoli florets, trimmed and cut in half
  • 2 tablespoons chopped scallions (optional, for topping)
  • 1 teaspoon toasted sesame seeds (optional, for topping)

Instructions

  1. Cut the salmon into bite-sized pieces and marinate in ¼ cup stir fry sauce for at least 15 minutes.
  2. Heat oil in a large skillet and sauté onions and garlic over medium heat.
  3. Add bell pepper and green beans or broccoli to the skillet along with the remaining stir fry sauce, cooking until the vegetables start to soften.
  4. Remove the vegetables and cook the salmon with the marinade until cooked through.
  5. Combine the salmon and vegetables, cooking for an additional 2 minutes.
  6. Serve immediately, topped with scallions and sesame seeds if desired.
