Caramelized Salmon Stir Fry

Instructions
- Preheat the convection oven or air fryer to 400°F.
- Trim the skin and cut the salmon into 1-inch chunks, then marinate in a mixture of soy sauce, Japanese BBQ sauce, and sesame oil for about 10 minutes.
- Prepare the vegetables by slicing the kale, chopping the mushrooms and zucchini, and slicing the green onion.
- Remove the salmon from the marinade, reserving the sauce, and pat dry.
- Sprinkle the salmon with brown sugar and place on a baking sheet lined with foil or in the air fryer basket.
- Bake or air fry the salmon for 7-10 minutes until caramelized and flaky.
- In a skillet, heat oil and stir fry the kale, mushrooms, and zucchini for 3-4 minutes, then add the reserved marinade and cook until tender.
- Combine the cooked salmon with the stir-fried vegetables, gently toss, and serve over rice with sesame seeds and green onion.
