Salmon Fillet with Caramelized Pineapple

Instructions
- Prepare all ingredients: chop pineapple, bell pepper, and red onion, and mix sauce ingredients in a bowl.
- Set the oven to broil and place the rack in the top position.
- Heat a teaspoon of cooking fat in a heavy skillet over high heat.
- Brush the salmon fillets with toasted sesame oil and season with salt and pepper.
- Place the fillets skin side down in the hot pan and cook for about 2 minutes until the skin is crispy.
- Transfer the fillets to an oven-safe dish and broil for 2 to 3 minutes until golden and crispy.
- In the same skillet, add pineapple, bell pepper, and red onion, and cook over high heat until the pineapple is caramelized, about 2 minutes.
- Add the sauce to the skillet and cook until it reduces to a syrupy consistency, about 30 seconds.
- Serve the caramelized pineapple on a plate topped with the salmon fillets.
