Asian Salmon with Vegetables

Ingredients

The salmon and vegetables

  • 1 ¼ pounds salmon fillet
  • 4 cups fresh mixed vegetables
  • 3 cups steamed rice
  • 1 tablespoon sesame seeds
  • ¼ cup sliced green onions
  • lime wedges for garnish

The hoisin lime glaze

  • ½ cup soy sauce
  • cup packed brown sugar
  • ¼ cup hoisin sauce
  • 2 inches ginger, sliced
  • 1 teaspoon minced garlic
  • 2 tablespoons fresh lime juice
  • 1 teaspoon sesame oil

Seasoning

  • kosher salt and pepper
  • cooking spray

Instructions

  1. Combine the soy sauce, brown sugar, hoisin sauce, ginger, garlic, lime juice, and sesame oil in a saucepan and bring to a boil.
  2. Lower the heat and simmer the sauce for about 10 minutes until it thickens, then remove the ginger pieces.
  3. Preheat the broiler and line a sheet pan with foil, spraying it with cooking spray.
  4. Place the salmon on one side of the pan, season with salt and pepper, and brush with the hoisin glaze.
  5. On the other side of the pan, spread the mixed vegetables in a single layer, season, and spray with cooking spray.
  6. Broil the salmon and vegetables for 10-15 minutes until cooked through.
  7. Remove from the oven, brush more glaze over the salmon, and drizzle over the vegetables, tossing to coat.
  8. Garnish with sesame seeds, lime wedges, and green onions, and serve with steamed rice.
