Broiled Salmon With Scallions and Sesame

Ingredients

The marinade

  • 2 cloves garlic
  • 3 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 2 teaspoons honey
  • 1 tablespoon vegetable oil
  • ½ teaspoon sesame seeds

The salmon and toppings

  • 3 8-ounce skin-on center-cut salmon fillets
  • 1 bunch scallions
  • 1 unit Fresno chile
  • to taste unit Kosher salt
  • more teaspoon sesame seeds

Instructions

  1. 1. Whisk together garlic, lime juice, soy sauce, honey, 1 tablespoon of oil, and ½ teaspoon of sesame seeds in a bowl.
  2. 2. Season the salmon fillets with salt and place them in a resealable plastic bag with half of the marinade. Seal the bag and let sit for 30 minutes.
  3. 3. Preheat the broiler.
  4. 4. Toss the scallions with the remaining 2 teaspoons of oil on a sizzle platter and broil until lightly charred, about 3 minutes.
  5. 5. Remove the salmon from the marinade and place it on top of the scallions. Spoon some reserved marinade over the salmon.
  6. 6. Broil the salmon until charred around the edges, about 6 minutes, watching closely to avoid burning.
  7. 7. Spoon more marinade over the salmon, top with sliced chile, and broil until the salmon is medium-rare at the thickest part, about 2 more minutes.
  8. 8. Sprinkle with more sesame seeds before serving.
