Ingredients

The salmon

  • 4 fillets skinless salmon

The marinade

  • 3 Tbsp light olive oil
  • 3 Tbsp lime juice
  • 2 tsp lime zest
  • 3 Tbsp honey
  • 1 Tbsp minced garlic
  • 1 ¼ tsp salt
  • 1 tsp freshly ground black pepper
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • 1 Tbsp chopped cilantro (optional)

Instructions

  1. Whisk together olive oil, lime juice, lime zest, honey, garlic, salt, and pepper in a bowl.
  2. Place salmon fillets in a resealable bag and pour the marinade over them, ensuring they are well coated.
  3. Let the salmon marinate at room temperature for 20 to 30 minutes.
  4. Preheat the broiler and position the oven rack in the center.
  5. Line a baking sheet with aluminum foil and spray it with cooking spray.
  6. Remove the salmon from the marinade and place it on the baking sheet with space between each piece.
  7. Sprinkle the tops of the salmon with cumin and coriander.
  8. Broil the salmon, checking frequently, for about 4 minutes, then tent with foil if needed to prevent excess browning.
  9. Continue to broil for an additional 3 to 6 minutes until cooked to your desired doneness.
  10. Remove from the oven, sprinkle with cilantro if desired, and serve.
