Broiled Salmon With Scallions and Sesame

Ingredients

The marinade

  • 2 cloves garlic
  • 3 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 2 teaspoons honey
  • 1 tablespoon vegetable oil
  • ½ teaspoon sesame seeds

The salmon and toppings

  • 3 8-ounce skin-on center-cut salmon fillets
  • 1 bunch scallions
  • 1 Fresno chile
  • to taste Kosher salt
  • more for serving sesame seeds

Instructions

  1. 1. Whisk together garlic, lime juice, soy sauce, honey, vegetable oil, and sesame seeds in a small bowl. Season salmon with salt and place in a resealable bag with half of the marinade. Seal and let sit for 30 minutes.
  2. 2. Preheat the broiler. Toss scallions with remaining vegetable oil on a sizzle platter and broil until charred, about 3 minutes.
  3. 3. Remove salmon from the marinade and place on top of the scallions. Spoon some reserved marinade over the salmon and broil until charred around the edges, about 6 minutes.
  4. 4. Spoon more marinade over the salmon, top with sliced chile, and broil until the salmon is charred and medium-rare, about 2 more minutes.
  5. 5. Sprinkle with additional sesame seeds before serving.
