Pan Seared Salmon with Sweet and Sour Sauce

Ingredients

The salmon

  • 4 pieces skinless salmon fillets
  • 3 ½ tsp olive oil or vegetable oil
  • Salt
  • Chopped green onion or cilantro
  • White tsp sesame seeds

The sauce

  • 2 tsp finely peeled and minced ginger
  • 2 tsp minced garlic
  • 2 tsp cornstarch
  • 1 ½ Tbsp soy sauce
  • cup pineapple juice
  • 2 Tbsp honey
  • 1 ½ Tbsp packed light brown sugar
  • 3 ½ Tbsp rice vinegar
  • 1 ½ Tbsp ketchup
  • ¼ tsp red pepper flakes

Instructions

  1. Let the salmon rest at room temperature for 10 minutes.
  2. Prepare the sweet and sour sauce by whisking together cornstarch and soy sauce in a bowl, then adding pineapple juice, honey, brown sugar, rice vinegar, ketchup, and red pepper flakes.
  3. Heat a small amount of oil in a saucepan and sauté garlic and ginger until golden.
  4. Pour the sauce mixture into the saucepan, bring to a boil, and stir until thickened.
  5. Dab the salmon dry with paper towels and season with salt.
  6. Heat oil in a skillet and cook the salmon for about 4 minutes on one side, then flip and cook for another 2 to 3 minutes.
  7. Plate the salmon, spoon the sweet and sour sauce over it, and garnish with green onions and sesame seeds.
