Pan Seared Salmon with Sweet and Sour Sauce

Instructions
- Let the salmon rest at room temperature for 10 minutes.
- Prepare the sweet and sour sauce by whisking together cornstarch and soy sauce in a bowl, then adding pineapple juice, honey, brown sugar, rice vinegar, ketchup, and red pepper flakes.
- Heat a small amount of oil in a saucepan and sauté garlic and ginger until golden.
- Pour the sauce mixture into the saucepan, bring to a boil, and stir until thickened.
- Dab the salmon dry with paper towels and season with salt.
- Heat oil in a skillet and cook the salmon for about 4 minutes on one side, then flip and cook for another 2 to 3 minutes.
- Plate the salmon, spoon the sweet and sour sauce over it, and garnish with green onions and sesame seeds.
