Mango Salsa

mango, small dice

Instructions
- Mix the seasonings and breadcrumbs together and place on a plate.
- Coat the non-skin side of the salmon fillets with the seasoning blend.
- Heat a sauté pan over high heat and add vegetable oil.
- Place the salmon fillets seasoned side down in the pan and sear for 3-4 minutes.
- Turn the salmon over and cook skin side down for an additional 5-7 minutes.
- For a less cooked salmon, reduce the cooking time.
- To make the mango salsa, dice the mango, pineapple, and red onion.
- Combine the diced ingredients with cilantro and lime juice in a bowl.
- Serve the salmon on a bed of rice or grain with the mango salsa.
