Ingredients

Seasoned Salmon

  • 2 fillets salmon
  • 2 tablespoons panko breadcrumbs
  • 1 teaspoon chili powder
  • 1 teaspoon brown sugar
  • ½ teaspoon paprika
  • ½ teaspoon granulated garlic
  • ½ teaspoon granulated onion
  • ¼ teaspoon black pepper
  • ½ teaspoon sea salt

Mango Salsa

  • ½ cup mango, small dice
  • ½ cup pineapple, small dice
  • ¼ cup red onion, small dice
  • 1 tablespoon cilantro, finely chopped
  • ½ lime juice

Instructions

  1. Mix the seasonings and breadcrumbs together and place on a plate.
  2. Coat the non-skin side of the salmon fillets with the seasoning blend.
  3. Heat a sauté pan over high heat and add vegetable oil.
  4. Place the salmon fillets seasoned side down in the pan and sear for 3-4 minutes.
  5. Turn the salmon over and cook skin side down for an additional 5-7 minutes.
  6. For a less cooked salmon, reduce the cooking time.
  7. To make the mango salsa, dice the mango, pineapple, and red onion.
  8. Combine the diced ingredients with cilantro and lime juice in a bowl.
  9. Serve the salmon on a bed of rice or grain with the mango salsa.
