Pan Seared Salmon

Ingredients

The salmon

  • 10 oz salmon fillets with skin
  • 1 pinch salt
  • 1 pinch ground black pepper

The cooking fat and flavorings

  • 2 tablespoons unsalted butter
  • 4 cloves garlic, peeled
  • 4 sprigs thyme
  • 3 dashes cayenne pepper
  • 1 squirt lemon juice

Instructions

  1. Rinse the salmon and pat dry, then season with salt and pepper.
  2. Heat a skillet over medium heat and melt the butter.
  3. Place the salmon skin side down in the skillet, adding garlic and thyme.
  4. Sear the salmon for about 1 minute without flipping.
  5. Flip the salmon and sear the other side for another minute, turning the garlic as needed.
  6. Flip back to skin side down, sprinkle with cayenne pepper, and add lemon juice.
  7. Turn off the heat and serve immediately.
