Pan Seared Cast Iron Salmon

Ingredients

The salmon

  • 2-3 fillets salmon (skin-on, 6-8oz each)

The seasoning and oil

  • 1-2 tablespoons olive oil
  • 1 tablespoon seafood seasoning
  • to taste salt
  • to taste pepper
  • ½ lemon

Instructions

  1. Allow the salmon to come to room temperature for 15 minutes and dry it completely with paper towels.
  2. Rub olive oil on both sides of the salmon and season with seafood seasoning, salt, and pepper.
  3. Heat a cast iron skillet on medium-high and coat it with olive oil.
  4. Place the salmon skin side up in the hot skillet, optionally adding lemon halves for flavor.
  5. Cook the salmon for 4 minutes without moving it.
  6. Monitor the sides of the salmon; when the color has lightened about ¾ of the way up, flip it over.
  7. Cook the salmon skin side down for another 4 minutes.
  8. Remove the salmon from the skillet and serve with lemon juice.
