The salmon

salmon, cut into 4 ounce filets
The seasoning

ghee, or coconut or avocado oil

Instructions
- Preheat the oven to 450°F and place a 12-inch cast iron skillet in the oven to heat up.
- Pat both sides of the salmon dry with a paper towel and season the skin with kosher salt.
- Carefully remove the hot pan from the oven and melt ghee in the pan.
- Add the salmon, skin side down, to the pan and ensure it sizzles.
- Season the top of the salmon with more salt and black pepper, then place it back in the oven.
- Cook for about 15 minutes until the salmon is opaque and flaky.
