Cast Iron Salmon

Ingredients

The salmon

  • 16 ounces salmon, cut into 4 ounce filets

The seasoning

  • 1 teaspoon ghee, or coconut or avocado oil
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 450°F and place a 12-inch cast iron skillet in the oven to heat up.
  2. Pat both sides of the salmon dry with a paper towel and season the skin with kosher salt.
  3. Carefully remove the hot pan from the oven and melt ghee in the pan.
  4. Add the salmon, skin side down, to the pan and ensure it sizzles.
  5. Season the top of the salmon with more salt and black pepper, then place it back in the oven.
  6. Cook for about 15 minutes until the salmon is opaque and flaky.
