Ingredients

The salmon and spices

  • 4 6-ounce salmon fillet portions, skin-on
  • 1 tablespoon paprika
  • 1 teaspoon light or dark brown sugar
  • 1 teaspoon kosher salt
  • ¾ teaspoon onion powder
  • ¾ teaspoon garlic powder
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme

For cooking and serving

  • 2 tablespoons unsalted butter
  • 1 lemon cut into wedges
  • to taste chopped fresh parsley or thyme

Instructions

  1. Pat the salmon fillets dry.
  2. In a small bowl, mix the paprika, brown sugar, salt, onion powder, garlic powder, cayenne, thyme, and oregano.
  3. Melt the butter in a separate bowl and brush it over the flesh side of the salmon fillets.
  4. Sprinkle the spice mixture evenly over the buttered fillets and pat it down gently.
  5. Heat a cast iron skillet over medium heat until hot.
  6. Place the salmon fillets in the skillet, flesh-side down, and cook for 2 to 3 minutes without moving them.
  7. Carefully flip the fillets and cook for an additional 5 to 6 minutes until fully cooked and crispy.
  8. Squeeze lemon juice over the salmon and serve immediately with fresh herbs and lemon wedges.
