Ingredients

The salmon

  • 4 filets salmon (6-8 ounces each, with skin on)

The seasoning

  • 1 tablespoon plus 2 teaspoons Cajun seasoning

The cooking oil

  • 2 tablespoons vegetable oil

For serving

  • to taste lemon wedges

Instructions

  1. Preheat the oven to 500 degrees and place a cast-iron skillet on the middle rack.
  2. Score the skin side of the salmon filets and pat them dry before seasoning with Cajun seasoning.
  3. Remove the skillet from the oven and place it on the stovetop over medium-high heat.
  4. Add oil to the skillet and heat until it is just smoking.
  5. Place the salmon filets skin-side down in the skillet and cook for about 2 minutes until very dark brown.
  6. Flip the salmon and cook for an additional 2 minutes until it is very dark brown and reaches an internal temperature of 145 degrees.
  7. Serve the salmon with lemon wedges.
