20-Minute Cast Iron Salmon

Instructions
- Press the salmon between paper towels to dry thoroughly.
- In a small bowl, stir together the Italian seasoning, garlic powder, salt, and pepper.
- Season both sides of the salmon with the seasoning blend and allow it to sit at room temperature for 30 minutes, or proceed with the recipe immediately.
- Heat the oil in a cast iron skillet over medium-high heat.
- Add the fillets, skin side down, and reduce heat to medium-low immediately.
- Press down with a fish spatula for 1 minute, and continue cooking for about 5 more minutes.
- Flip the salmon and cook for about 1 minute longer, until an instant-read thermometer registers 120°F for medium-rare.
- Allow to rest for 5 minutes before serving.
