Chewy Pistachio Lace Cookies

Ingredients

The cookies

  • 1 cup rolled oat flakes
  • ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon fine-grain sea salt
  • ½ cup white granulated sugar
  • ½ cup light brown sugar
  • ½ cup unsalted butter, melted and cooled
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ cup finely chopped pistachios

The icing

  • cups powdered sugar, sifted
  • 2 tablespoons milk
  • a pinch salt

Instructions

  1. Preheat the oven to 350°F and line 2 baking sheets with parchment paper.
  2. In a medium bowl, mix together the oat flakes, flour, baking soda, and salt.
  3. In a large bowl, whisk together the sugars and melted butter until combined, then add the egg and vanilla, whisking until incorporated.
  4. Gradually add the flour mixture in two batches, mixing until combined, then fold in the pistachios.
  5. Scoop tablespoon-sized balls of dough onto the baking sheets, spacing them 2½ inches apart.
  6. Bake for 10 to 12 minutes until the edges are lightly golden brown.
  7. Allow to cool on the baking sheet for 5 minutes before transferring to a cooling rack.
  8. For the icing, whisk together the powdered sugar, milk, and salt, then drizzle over the cooled cookies.
