Chewy Pistachio Lace Cookies

The icing

Instructions
- Preheat the oven to 350°F and line 2 baking sheets with parchment paper.
- In a medium bowl, mix together the oat flakes, flour, baking soda, and salt.
- In a large bowl, whisk together the sugars and melted butter until combined, then add the egg and vanilla, whisking until incorporated.
- Gradually add the flour mixture in two batches, mixing until combined, then fold in the pistachios.
- Scoop tablespoon-sized balls of dough onto the baking sheets, spacing them 2½ inches apart.
- Bake for 10 to 12 minutes until the edges are lightly golden brown.
- Allow to cool on the baking sheet for 5 minutes before transferring to a cooling rack.
- For the icing, whisk together the powdered sugar, milk, and salt, then drizzle over the cooled cookies.
