Vegan Creamy Rosemary-Chive Cashew Spread

Ingredients

  • 1 cup raw cashews
  • 1 large garlic clove
  • 1 tablespoon chopped chives
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon nutritional yeast seasoning
  • 1 teaspoon chopped rosemary
  • ½ teaspoon onion powder
  • ¼ teaspoon salt

Instructions

  1. Cover the cashews with 1 inch of water in a pot.
  2. Bring to a boil and then reduce heat to a simmer until the cashews are tender, about 20 minutes.
  3. Lift the cashews from the water and blend in a food processor until they form a ball, about 3 minutes.
  4. Add 1 tablespoon of cooking water and the remaining ingredients to the food processor.
  5. Pulse until all ingredients are incorporated.
  6. Transfer to a container and refrigerate for up to 5 days.
