Ingredients

The chicken

  • 8-10 pieces bone-in chicken thighs

The seasoning

  • 1 ½ teaspoon kosher salt
  • ¾ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • ½ teaspoon freshly ground black pepper

The oil

  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with aluminum foil, placing a wire rack on top.
  2. Arrange the chicken thighs skin side down on the rack.
  3. Mix the spices in a small bowl and sprinkle half over the chicken.
  4. Flip the chicken to skin side up, drizzle with olive oil, and sprinkle with the remaining spices.
  5. Roast in the oven for about 50 minutes until the skin is crispy and golden, and the chicken is cooked through.
  6. Let the chicken rest for 10 minutes before serving.
