Ingredients

The chicken

  • 3-3½ pounds chicken drumsticks

The seasoning

  • teaspoons salt
  • 1 teaspoon white pepper
  • 1 teaspoon bouillon powder
  • ¼ cup canola oil
  • 4-6 cloves garlic (minced)
  • 2-3 tablespoons fresh herbs (thyme, parsley, oregano)
  • 1 tablespoon smoked paprika
  • ½ teaspoon cayenne pepper (optional)
  • 2 tablespoons onion powder

Instructions

  1. Wash and dry the chicken legs, then rub them with salt, white pepper, and bouillon powder.
  2. In a small pan over medium-low heat, combine canola oil, minced garlic, fresh herbs, smoked paprika, and cayenne pepper. Stir for about 30 seconds to 1 minute, then let sit for 5 minutes.
  3. Preheat the oven to 425°F.
  4. In a large bowl, toss the chicken with the garlic paprika spice mix and sprinkle with onion powder.
  5. Line a baking pan with foil and place a wire rack on top. Arrange the chicken legs in a single layer on the rack.
  6. Bake the chicken legs for about 40-45 minutes until cooked through and the skin is crispy, rotating halfway if desired.
  7. Remove from the oven and let cool slightly before serving.
