Instructions
- Pat the chicken dry and season with salt and pepper.
- Preheat a cast iron skillet over high heat, then add olive oil and chicken thighs, cooking until browned.
- Remove the chicken and drain most grease, leaving some to sauté the vegetables.
- Add bell peppers and onions to the skillet and cook until soft, then add minced garlic.
- Blend the cooked veggies into a smooth puree and return to the skillet.
- Add chicken broth, paprika, smoked paprika, cayenne, and remaining seasonings; whisk to combine.
- Return the chicken to the skillet, coat with sauce, and simmer to develop flavors.
