Paprika Chicken

Ingredients

The chicken

  • 4 large Bone-in chicken thighs (skin-on)
  • 1 ½ tsp Sea salt (divided into ½ tsp and 1 tsp)
  • ½ tsp Black pepper (divided)
  • 2 tbsp Olive oil

The vegetables

  • 1 large Red bell pepper (sliced into thin strips)
  • 1 medium Yellow onion (sliced thinly)
  • 3 cloves Garlic

The spices and broth

  • 2 tsp Paprika
  • 2 tsp Smoked paprika
  • ½ tsp Cayenne pepper (or more for spicier chicken)
  • ½ cup Chicken broth, reduced sodium

Instructions

  1. Pat the chicken dry and season with salt and pepper.
  2. Preheat a cast iron skillet over high heat, then add olive oil and chicken thighs, cooking until browned.
  3. Remove the chicken and drain most grease, leaving some to sauté the vegetables.
  4. Add bell peppers and onions to the skillet and cook until soft, then add minced garlic.
  5. Blend the cooked veggies into a smooth puree and return to the skillet.
  6. Add chicken broth, paprika, smoked paprika, cayenne, and remaining seasonings; whisk to combine.
  7. Return the chicken to the skillet, coat with sauce, and simmer to develop flavors.
