Ingredients

The granola

  • cups raw buckwheat groats
  • cups gluten-free rolled oats
  • ¾ cup chopped raw nuts or seeds
  • ½ cup unsweetened coconut flakes
  • 2 Tbsp chia seeds
  • 3 Tbsp coconut sugar
  • ½ tsp sea salt
  • ¾ tsp ground cinnamon
  • ¼ cup coconut, avocado, or olive oil
  • ½ cup maple syrup
  • 3 Tbsp nut or seed butter (optional)
  • cup dried fruit (optional)

For serving

  • to taste Fresh fruit
  • to taste Dairy-free milk

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine buckwheat groats, oats, nuts, coconut, chia seeds, coconut sugar, sea salt, and cinnamon.
  3. In a small saucepan, warm the oil and maple syrup until melted and combined, then add nut butter if using.
  4. Pour the wet mixture over the dry ingredients and mix well to coat.
  5. Spread the mixture evenly onto a baking sheet and bake for 25-30 minutes, stirring halfway through.
  6. Add dried fruit while the granola is still warm, or chocolate after it has cooled.
  7. Store in an airtight container for a few weeks or freeze for longer storage.
