Simple Grain-Free Granola

Ingredients

  • ½ cup unsweetened coconut flake
  • 2 cups slivered raw almonds
  • cups raw pecans
  • 1 cup raw walnuts
  • 3 Tbsp chia seeds
  • 1 Tbsp flaxseed meal
  • tsp ground cinnamon (optional)
  • 2 Tbsp coconut, cane, or muscavado sugar
  • ¼ tsp sea salt
  • 3 Tbsp coconut or olive oil
  • cup maple syrup (or agave or honey if not vegan)
  • ¼ cup dried blueberries (optional)
  • ¼ cup roasted unsalted sunflower seeds (optional)

Instructions

  1. Preheat the oven to 325°F (162°C) and position a rack in the center.
  2. In a large mixing bowl, combine the coconut, nuts, chia seeds, flaxseed, cinnamon, coconut sugar, and salt.
  3. In a small saucepan over low heat, warm the coconut oil and maple syrup, then pour over the dry ingredients and mix well.
  4. Spread the mixture evenly onto a large baking sheet and bake for 20 minutes.
  5. Remove from the oven, add dried blueberries and sunflower seeds, and stir.
  6. Increase the oven temperature to 340°F (171°C) and return to the oven for another 5-8 minutes until deep golden brown.
  7. Once browned, remove from the oven and let cool completely.
  8. Store in an airtight container for a few weeks.
