Toasted Coconut Berry Grain Free Granola

Ingredients

  • 1 cup larger size whole mixed nuts (like brazil nuts, hazelnut, or walnuts)
  • 1 cup raw almonds
  • ½ cup pumpkin seeds
  • ¼ cup coconut oil
  • ¼ to ⅓ cup maple syrup
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • dash sea salt
  • cup unsweetened coconut flakes
  • 1 to 1 ¼ cup dried berries (blueberry, cranberry, etc.)
  • 2 tbsp chia seeds (optional)

Instructions

  1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  2. Chop the nuts in a blender or food processor until roughly chopped.
  3. Transfer the chopped nuts to a large bowl and mix in the pumpkin seeds.
  4. In another bowl, combine the coconut oil, vanilla, and maple syrup, then pour over the nut mixture and mix well.
  5. Add the spices and mix until everything is evenly coated.
  6. Spread the mixture evenly on the baking sheet and sprinkle a little sea salt on top.
  7. Bake for 15 minutes, then remove and toss the mixture to flip the nuts and seeds.
  8. Return to the oven and bake for another 15 minutes.
  9. After the second bake, toss again and add the coconut, spreading it evenly.
  10. Bake for an additional 5-8 minutes until the coconut is toasted.
  11. Remove from the oven and let cool.
  12. Once cooled, mix in the dried berries and any additional spices or chia seeds if desired.
  13. Store in a sealed container or gift jars.
