Toasted Coconut Berry Grain Free Granola

dried berries (blueberry, cranberry, etc.)

Instructions
- Preheat the oven to 325°F and line a baking sheet with parchment paper.
- Chop the nuts in a blender or food processor until roughly chopped.
- Transfer the chopped nuts to a large bowl and mix in the pumpkin seeds.
- In another bowl, combine the coconut oil, vanilla, and maple syrup, then pour over the nut mixture and mix well.
- Add the spices and mix until everything is evenly coated.
- Spread the mixture evenly on the baking sheet and sprinkle a little sea salt on top.
- Bake for 15 minutes, then remove and toss the mixture to flip the nuts and seeds.
- Return to the oven and bake for another 15 minutes.
- After the second bake, toss again and add the coconut, spreading it evenly.
- Bake for an additional 5-8 minutes until the coconut is toasted.
- Remove from the oven and let cool.
- Once cooled, mix in the dried berries and any additional spices or chia seeds if desired.
- Store in a sealed container or gift jars.
