Ingredients

The granola mixture

  • 1 cup roughly chopped raw almonds
  • 1 cup unsweetened coconut flakes
  • ½ cup roughly chopped raw pecans
  • ¼ cup pepitas
  • ¼ cup dry quinoa
  • 1 tablespoon chia seeds
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ cup hemp seed

The wet ingredients

  • ¼ cup coconut oil, melted
  • cup maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the almonds, coconut flakes, pecans, pepitas, dry quinoa, chia seeds, cinnamon, and nutmeg.
  4. In a small bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract.
  5. Pour the wet mixture over the dry ingredients and toss to coat.
  6. Spread the granola mixture onto the prepared baking sheet.
  7. Bake for 30 minutes, stirring every 10 minutes to prevent burning.
  8. Remove from the oven and stir in the hemp seed.
  9. Let cool and store in an airtight container.
