Ingredients

The base

  • 3 cups old-fashioned rolled oats
  • 1 cup raw nuts of choice
  • 2 tablespoons flaxseed meal
  • ¾ teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground pumpkin pie spice
  • ½ cup pure maple syrup or honey
  • cup melted coconut oil or light olive oil
  • 1 large egg white
  • 1 ½ teaspoons vanilla extract
  • ½ cup unsweetened coconut flakes

Optional mix-ins

  • ½ cup dried fruit
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the oats, nuts, flaxseed meal, salt, cinnamon, and pumpkin pie spice.
  3. Add the maple syrup, melted oil, whisked egg white, and vanilla to the dry ingredients and mix well.
  4. Spread the mixture evenly on the prepared baking sheet and press down lightly.
  5. Bake for 12 minutes, then stir in the coconut flakes and return to the oven for another 10 to 12 minutes until golden.
  6. Allow the granola to cool completely on the pan before adding dried fruit and chocolate chips, then break into clumps.
