Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, nuts, flaxseed meal, salt, cinnamon, and pumpkin pie spice.
- Add the maple syrup, melted oil, whisked egg white, and vanilla to the dry ingredients and mix well.
- Spread the mixture evenly on the prepared baking sheet and press down lightly.
- Bake for 12 minutes, then stir in the coconut flakes and return to the oven for another 10 to 12 minutes until golden.
- Allow the granola to cool completely on the pan before adding dried fruit and chocolate chips, then break into clumps.
