Ingredients

The bread

  • 2 cups gluten-free all-purpose flour
  • 2 tablespoons gluten-free all-purpose flour (for dusting)
  • ¾ cup white sugar
  • 1 tablespoon baking powder
  • ¾ teaspoon kosher salt
  • 4 teaspoons poppy seeds
  • 1 cup unsweetened almond milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon Meyer lemon zest
  • ½ cup unsalted butter
  • 1 tablespoon unsalted butter (for greasing)

The glaze (optional)

  • 1 cup confectioners' sugar
  • 4 teaspoons Meyer lemon juice

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan by buttering and flouring it.
  2. In a large bowl, mix the flour, sugar, baking powder, salt, and poppy seeds.
  3. In a separate bowl, whisk together the milk, eggs, vanilla, and lemon zest.
  4. Combine the wet ingredients with the dry ingredients and fold in the melted butter.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 50-55 minutes, rotating halfway through, until golden brown and a toothpick comes out clean.
  7. Let the bread cool in the pan before glazing.
  8. To make the glaze, mix the confectioners' sugar and lemon juice until smooth, then pour over the cooled bread.
